Barley Salad with Fresh Mint

- 3 cups water1 cup pearled barley1/2 cup chopped green onions1/2 cup diced red bell pepper1/4 cup chopped flat Italian parsley1/3 cup chopped fresh basil leaves2 TB chopped fresh mint leaves1/4 cup canola oil1 clove garlic, minced1-2 TB freshly squeezed lemon juiceSea salt and freshly ground black pepper to taste shopping list
How to make it
- In a sauce pan, combine water and barley. Bring to a boil, reduce heat to low and simmer until barley is tender, 40-45 minutes. Drain barley and set aside. Combine green onions, red pepper, parsley, basil and mint in a large bowl. Toss in the cooked barley. In a small bowl, whisk together the oil, minced garlic and lemon juice. Season to taste with salt and pepper, then toss into barley salad, stirring to combine well. Add more sal and pepper to taste. Serve room temperature or cold.

I'm kind of a new comer of sorts with mint. I just made a barley mountains through, so have barley on the head, the salad sounds excellent. Thank you for the post.
