Lemon Gelatin Salad Recipe
LEMON GELATIN SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Parnell Estate in Tyler, Texas in 1984.

Ingredients
  • 3 ounce package lemon gelatin
  • 1 cup hot water
  • 1 cup pineapple syrup and water
  • 1 tablespoon vinegar
  • 1/2 teaspoon salt
  • 1 cup grated carrots
  • 1 small can crushed pineapple drained
  • 1/3 cup chopped pecans

Directions
  1. Dissolve gelatin in hot water then add cold water to pineapple syrup to make 1 cup.
  2. Add vinegar and 1/4 teaspoon salt and add to gelatin then chill until slightly thickened.
  3. Season carrots with 1/4 teaspoon salt then add pineapple and nuts and fold into gelatin.
  4. Turn into individual molds and chill until firm.
