Summer just wouldn’t be the same if I couldn’t eat warm cherry crisp topped with vanilla ice cream. This recipe is open to variation also, try adding some chocolate chips or crystallized ginger--just make sure they are gluten-free first.

  • 1¼ cups Bob’s Red Mill Gluten-Free All-Purpose Flour
  • Pinch of Salt
  • 1/2 cup butter, softened
  • ½ to one cup fair-trade sugar, depending on taste (I use a mixture of brown and white sugar but you can try any combination of sweeteners.)
  • About a pound of pitted cherries
  • 2-3 large peaches, pitted and sliced
  • 3 tablespoons honey
  • Cinnamon and nutmeg to taste

Directions
  1. Preheat oven to 375 degrees.
  2. Toss the fruit with 3 tablespoons of honey and a few sprinkles of cinnamon and nutmeg and put in a 9”x9” inch glass baking dish.
  3. Combine the fl our, sugar and salt. Cut in the softened butter with a fork until the mixture is the consistency of coarse sand. Pour over
  4. the fruit and bake for about an hour.
  5. It is hard to ruin this recipe but if the fruit is really ripe you may want to use a little tapioca flour to absorb some of the juices.
  6. Serve warm with ice cream.
