Gluten-Free Peach and Cherry Crisp

- 1¼ cups Bob’s Red Mill gluten-Free all-purpose flour shopping list
- Pinch of salt shopping list
- 1/2 cup butter, softened shopping list
- ½ to one cup fair-trade sugar, depending on taste (I use a mixture of brown and white sugar but you can try any combination of sweeteners.) shopping list
- About a pound of pitted cherries shopping list
- 2-3 large peaches, pitted and sliced shopping list
- 3 tablespoons honey shopping list
- cinnamon and nutmeg to taste shopping list
How to make it
- Preheat oven to 375 degrees.
- Toss the fruit with 3 tablespoons of honey and a few sprinkles of cinnamon and nutmeg and put in a 9”x9” inch glass baking dish.
- Combine the fl our, sugar and salt. Cut in the softened butter with a fork until the mixture is the consistency of coarse sand. Pour over
- the fruit and bake for about an hour.
- It is hard to ruin this recipe but if the fruit is really ripe you may want to use a little tapioca flour to absorb some of the juices.
- Serve warm with ice cream.
