This is my favorite Chicken Salad recipe.

Ingredients
  • 3 c. cooked cubed chicken
  • 3 hard boiled eggs, chopped
  • 1 1/2 c. mayonnaise
  • 1 T. curry powder
  • 1/2 t. garlic powder
  • 1/2 c. fresh orange segments
  • 1/2 c. sliced scallions
  • 1/2 c. sliced black olives
  • 1/2 c. chopped cilantro
  • 1/2 c. chopped pecans or almonds
  • 1/4 t. salt
  • 1/4 t. pepper

Directions
  1. Combine all ingredients.
  2. Serve immediately or refridgerate up to 3 days.
  3. Good over mixed greens as a main course salad or as a sandwich filling.
