Marinated Carrot Salad

- 2 lb carrots, peeled and sliced shopping list
- 1 large onion, sliced shopping list
- 1 green pepper, chopped shopping list
- 1 (10 3/4 oz) tomato soup, undiluted shopping list
- 1 cup sugar shopping list
- 1 tsp dry mustard shopping list
- 1 cup vinegar shopping list
- 1 tsp salt shopping list
- 3/4 cup oil shopping list
- opt ional- cauliflower slices shopping list
How to make it
- Cook carrots until crisp and tender in a small amount of boiling water, drain.
- Combine carrots, cauliflower (if using) onion and green pepper. Set aside.
- Combine the remaining ingredients, stirring until well mixed.
- Pour over the veggies and toss lightly.
- Refrigerate over night or several hours.

My Mother use to make this recipe for carrots...and she did call it "Copper Pennies"...it was the "ONLY" way that she could get my brothers and I to eat carrots!....this was over 50 years...moremjcmcook in Beach City loved it
