How to make it

  • Cook carrots until crisp and tender in a small amount of boiling water, drain.
  • Combine carrots, cauliflower (if using) onion and green pepper. Set aside.
  • Combine the remaining ingredients, stirring until well mixed.
  • Pour over the veggies and toss lightly.
  • Refrigerate over night or several hours.

    Thank-you so much for posting this recipe!
    My Mother use to make this recipe for carrots...and she did call it "Copper Pennies"...it was the "ONLY" way that she could get my brothers and I to eat carrots!....this was over 50 years ago...so I guess one could say "classic recipes" never die....they are, thankfully passed on to the next generation!
    A "5"FORK!!!! What else could you give a "Classic"?
