Spinach Steak Pinwheels Recipe
Bacon and spinach bring plenty of flavor to the sirloin spirals.

Ingredients
  • 1 1/2 pounds boneless beef sirloin steak
  • 8 bacon strips, cooked and drained
  • 1 package 10 ounces frozen chopped spinach thawed and squeezed dried
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper

Directions
  1. Make diaganal cuts in steak at 1 inch intervals to within 1/2 inch of bottom of meat.
  2. Repeat cuts in opposite direction.
  3. Pound to 1/2 inch thickness.
  4. Place bacon down the center of the meat.
  5. In a bowl, combine the spinach, parmesan cheese, salt and cayenne; spoon over bacon.
  6. Roll up and secure with toothpicks.
  7. cut into six slices.
  8. Grill, uncovered over medium heat for 6 minutes on each side or until meat reaches desired doneness for rare 140 degrees; medium 160 degrees or well-done 170 degrees.
  9. Discard toothpicks.
