How to make it

  • Make diaganal cuts in steak at 1 inch intervals to within 1/2 inch of bottom of meat.
  • Repeat cuts in opposite direction.
  • Pound to 1/2 inch thickness.
  • Place bacon down the center of the meat.
  • In a bowl, combine the spinach, parmesan cheese, salt and cayenne; spoon over bacon.
  • Roll up and secure with toothpicks.
  • cut into six slices.
  • Grill, uncovered over medium heat for 6 minutes on each side or until meat reaches desired doneness for rare 140 degrees; medium 160 degrees or well-done 170 degrees.
  • Discard toothpicks.

    This is a really good recipe. It may seem a little confusing if you are not used to scoring meats -ah never mind-it's a good one, try it.
