Beef Vindaloo

- 1 lb of beef round eye steaks (chop into cubes about 1x1 cm shopping list
- 2 cups of frozen corn shopping list
- 1/2 cup finely chopped ginger root shopping list
- 1 cup finely chopped onion shopping list
- 1/4 cup of pressed garlic shopping list
- one can of Vindaloo sauce found in most grocery stores in the asian section shopping list
- 2 to 3 cups of grated cheese (marble or cheddar works well) shopping list
- salt and pepper shopping list
- 3 to 4 cups cooked rice or chinese noodles shopping list
How to make it
- saute onions, ginger, and garlic in a tsp of olive oil, and set aside. fry meat, draining excess grease. combine with ginger mixture and add the vindaloo sauce. Let simmer until just boiling and add the frozen corn. Let simmer for 5 min and combine with rice. Mix until all the rice is coated and transfer to a casserol dish, layer with cheese and bake at 350F for about 20 min
