  • saute onions, ginger, and garlic in a tsp of olive oil, and set aside. fry meat, draining excess grease. combine with ginger mixture and add the vindaloo sauce. Let simmer until just boiling and add the frozen corn. Let simmer for 5 min and combine with rice. Mix until all the rice is coated and transfer to a casserol dish, layer with cheese and bake at 350F for about 20 min

    I forgot to mention that you can alson use red and green peppers in place of the corn. or both if you want lot's of colour
