  • 12 slices day old white bread with crust removed
  • 16 ounces cream cheese softened
  • 1 cup fresh blueberries
  • 12 eggs
  • 2 cups milk
  • 1/3 cup maple syrup
  • Sauce:
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 cup fresh blueberries
  • 1 tablespoon butter

Directions
  1. Cut bread into 1” cubes then place half in greased rectangular baking dish.
  2. Cut cream cheese into 1” cubes then place over bread.
  3. Top with blueberries then remaining bread.
  4. In large bowl beat eggs then add milk and syrup.
  5. Mix well and pour over bread mix then cover and chill 8 hours or overnight.
  6. Remove from refrigerator 30 minutes before baking.
  7. Cover and bake at 350 for 30 minutes then uncover and bake 30 minutes longer.
  8. In saucepan combine sugars, cornstarch and water then boil 3 minutes stirring constantly.
  9. Stir in blueberries then reduce heat and simmer 10 minutes then stir in butter.
  10. Serve over French toast.
