Sweet and Sour Shrimp

- 1 tablespoon cornstarch shopping list
- 1/4 teaspoon salt shopping list
- 1 egg white shopping list
- 1 pound large shrimp peeled and deveined shopping list
- 15-1/4 ounce can unsweetened pineapple chunks undrained shopping list
- 1/3 cup water shopping list
- 3 tablespoons sugar shopping list
- 3 tablespoons ketchup shopping list
- 3 tablespoons cider vinegar shopping list
- 1 tablespoons dry sherry shopping list
- 2 tablespoons cornstarch shopping list
- 1 teaspoon dark sesame oil shopping list
- 1/4 teaspoon salt shopping list
- 1 tablespoons dark sesame oil shopping list
- 1/2 cup diced onion shopping list
- 1/3 cup diced mushrooms shopping list
- 1/3 cup frozen green peas shopping list
- 4 cups hot cooked rice shopping list
How to make it
- Combine first 3 ingredients in a medium bowl then stir well with a wire whisk.
- Add shrimp and stir well then cover and marinate in refrigerator for 15 minutes.
- Drain pineapple reserving 2 tablespoons of the juice.
- Combine reserved pineapple juice, water and next 7 ingredients then stir until well blended.
- Set aside.
- Remove shrimp from bowl and discard marinade.
- Heat 1 tablespoon sesame oil in a wok or large nonstick skillet over medium high heat.
- Add shrimp then stir fry 1 minute.
- Add onion and mushrooms then stir fry 2 minutes.
- Add ketchup mixture and peas then stir fry 1 minute or until thick and bubbly.
- Remove from heat and stir in pineapple then serve over rice.
