How to make it

  • Preheat oven to 350 degrees F. Spray two 9" round cake layer pans with nonstick coating spray that contains flour, and set aside.
  • In large bowl combine all ingredients except chocolate chips, 1/4 cup peanut butter, and Chocolate Frosting and beat on low speed until combined; then beat three minutes at medium speed. Do not skimp on the beating time. Stir in 1 cup of the chocolate chips.
  • Spoon batter evenly into prepared pans. Bake at 350 degrees for 25-35 minutes until set, brown, and toothpick inserted in center comes out clean. Cool in pan for 10 minutes, then loosen edges and turn cakes onto wire rack. Cool completely.
  • In small microwaave safe bowl combine remaining 1 cup of the chocolate chips with 1/4 cup peanut butter. Microwave on medium power for 1-2 minutes until chips are almost melted. Stir until chips are melted and mixture is smooth. Spread this mixture between the cake layers.
  • Prepare Chocolate Frosting. Frost top and sides of cake with the frosting. Store, covered, at room temperature.
  • Frosting:
  • Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting
