How to make it

  • Preheat oven to 425F degrees.
  • Place dough on baking sheet lined with parchment paper.
  • Refrigerate.
  • In bowl, stir together apples, lemon juice and 1/2 cup sugar.
  • Transfer to colander and let drain for 20 minutes.
  • In 9" ovenproof saute pan over medium-high heat, melt butter.
  • Stir in1 cup sugar.
  • Cook, stirring, until mixture is bubbly caramel brown
  • (10 to 15 minutes).
  • Remove from heat.
  • Arrange apples in pan, overlapping them.
  • Set over medium heat andcook until apples are tender (about 20 minutes).
  • Press down apples occasionally.
  • Remove pan from heat and set on clean baking sheet.
  • Place dough on top of apples.
  • Trim edges leaving 1" overhang.
  • Tuck overhanging dough into pan sides, cut 4 steam vents on top.
  • Bake until crust is golden, about 20 minutes.
  • Remove pan from oven and let stand 5 minutes.
  • Using pot holder,gently shake pan.
  • Place plate over pan.
  • Quickly invert pan and plate together.
  • Lift off pan and let syrup drip over tarte tatin.
  • Let cool 30 minutes.
  • Cut into slices and serve with your favorite ice cream
  • ( esp vanilla caramel flavor ice cream ).
