Rosas Tarts

A co-worker (named Rosa!) gave me this recipe about 30 years ago. I have used it on many different occasions when you just need that "little something".
Ingredients
- 18 vanilla wafers shopping list
- 2 eggs shopping list
- 2 8oz packages of cream cheese shopping list
- 3/4 cups sugar shopping list
- 1 Tablespoon lemon juice shopping list
- 1 teaspoon vanilla shopping list
- Canned cherry or blueberry pie filling shopping list
How to make it
- Put cupcake liners in muffin tin (you will need a total of 18 cups or make in 2 batches).
- Cream eggs, cheese, sugar, lemon juice and vanilla.
- Pour into lines on top of wafers.
- Bake 20 minutes at 375*.
- When cool, top each with a spoonful of the cherry or blueberry pie filling.
