Created at Ritz-Carlton Hotel in 1910 Just a fancy name for a cold cream potato soup,but its pretty fair,if you like cold potato soup.

Ingredients
  • 2 Leeks(1-1/4 lb.)
  • 1 Medium Onion,chopped(1cup)
  • 4 teaspoons Instant Chicken Bouillon Granules
  • 1/4 to 1/2 teaspoon Salt
  • 1-1/2 Cups Instant Potato Flakes
  • 2-1/3 Cups Milk
  • 1 Cup Whipping Cream
  • Snipped Chives

Directions
  1. Chop white part of leeks.
  2. In large saucepan,mix leeks,onion,water,bouillon granules and salt.
  3. Bring to a boil over high heat.
  4. Reduce heat,cover and simmer 10 minutes.
  5. Pour mixture into blender container.
  6. Add potato flakes and 2/3 cup milk,cover and blend on high until smooth.
  7. Pour into a large bowl,stir in remaining 1-2/3 cups milk and whipping cream.
  8. Force mixture through a fine sieve.
  9. Cover and refrigerate 8 hours or overnight.
  10. Serve cold with a sprinkling of chives.
  11. Serves 8

Love this recipe but I don't dare use whipping cream! I use all milk and it's still rich. We eat it warm too, too old fashioned to eat our soup cold unless we're standing in front of the fridge later that night!

"Souper" recipe and there is no such thing as JUST a cold potato soup. This is delicious.
