How to make it

  • Chop white part of leeks.
  • In large saucepan,mix leeks,onion,water,bouillon granules and salt.
  • Bring to a boil over high heat.
  • Reduce heat,cover and simmer 10 minutes.
  • Pour mixture into blender container.
  • Add potato flakes and 2/3 cup milk,cover and blend on high until smooth.
  • Pour into a large bowl,stir in remaining 1-2/3 cups milk and whipping cream.
  • Force mixture through a fine sieve.
  • Cover and refrigerate 8 hours or overnight.
  • Serve cold with a sprinkling of chives.
  • Serves 8
