Frozen Lime Mousse Tart Recipe
A great dessert for a BBQ...very pretty and refreshing too.

Ingredients
  • 1/2c soft butter
  • 1/4c sugar
  • 1c flour
  • FILLING
  • 2/3c lime juice
  • 1/4c sugar
  • 2tsp unflavored gelatin
  • 1 300ml can sweetened condensed milk
  • 2 drops green food coloring
  • 1T grated lime rind
  • 11/2c whipping cream

Directions
  1. Beat butter with sugar until fluffy, stir in flour in 3 additions. Press onto bottom and up sides of 9"(23cm) round tart pan. Prick with a fork and bake at 350F(180C) for 25 mins. or until lightly browned.
  2. Cool on rack.
  3. FILLING: In a saucepan mix lime juice and sugar. Sprinkle with gelatin, let stand 1min.
  4. Heat over medium heat, stirring until gelatin and sugar dissolve.
  5. Whisk in condensed milk, coloring and rind; cover and refrigerate until slightly thickened.
  6. Whip 1c of the cream and fold into lime mixture. Pour into prepared crust. Freeze for about 6 hours.
  7. Whip remaining cream and pipe over top.

Sounds really refreshing....I always wonder how to get tarts out of the pan easier....any suggestions would be appreciated.
