How to make it

  • Find the slit in each apricot where the pit was removed, or make one with a small paring knife
  • Gently push one whole toasted almond into each apricot
  • Squeeze the apricot closed around the almond
  • Break up the chocolate and heat on full power in microwave or over very low heat until melted. Stir until smooth.
  • Line a cookie sheet with waxed paper
  • One at a time, drop the apricots into the melted chocolate, turn to coat completely and lift out with a fork.
  • Tap the excess chocolate off and place apricots on the waxed paper lined cookie sheet
  • Refrigerate until completely set
  • Store in airtight container, in the refrigerator.
