APRICOT ALMOND CHOCOLATE CHEWS

I invented this 'recipe' out of a need for a "nuts and chews" type candy, that would be okay to have while maintaining a South Beach Diet diet. Nobody would ever think of this as diet food.. The 60 servings are the number of pieces, but I betcha can't eat just one!
Ingredients
- 60 whole almonds, blanched or unblanched, toasted shopping list
- 60 dried Turkish apricots (approximately one pound) shopping list
- Approximately 1/2 pound of bittersweet chocolate, the best quality you can find, and the darker the better shopping list
How to make it
- Find the slit in each apricot where the pit was removed, or make one with a small paring knife
- Gently push one whole toasted almond into each apricot
- Squeeze the apricot closed around the almond
- Break up the chocolate and heat on full power in microwave or over very low heat until melted. Stir until smooth.
- Line a cookie sheet with waxed paper
- One at a time, drop the apricots into the melted chocolate, turn to coat completely and lift out with a fork.
- Tap the excess chocolate off and place apricots on the waxed paper lined cookie sheet
- Refrigerate until completely set
- Store in airtight container, in the refrigerator.
