Ingredients
  • 60 whole almonds, blanched or unblanched, toasted
  • 60 dried Turkish apricots (approximately one pound)
  • Approximately 1/2 pound of bittersweet chocolate, the best quality you can find, and the darker the better

Directions
  1. Find the slit in each apricot where the pit was removed, or make one with a small paring knife
  2. Gently push one whole toasted almond into each apricot
  3. Squeeze the apricot closed around the almond
  4. Break up the chocolate and heat on full power in microwave or over very low heat until melted. Stir until smooth.
  5. Line a cookie sheet with waxed paper
  6. One at a time, drop the apricots into the melted chocolate, turn to coat completely and lift out with a fork.
  7. Tap the excess chocolate off and place apricots on the waxed paper lined cookie sheet
  8. Refrigerate until completely set
  9. Store in airtight container, in the refrigerator.
