Baked Curry Chicken Recipe
Being if indian origin, i love my tumeric and masala loaded food, however i sometimes get pressed for time, so this makes a good fix and goes well with naan/roti or even rice.

Ingredients
  • 4 pieces chicken breast skinless(deboned if you like)
  • 2 tsp tumeric powder
  • 2 tsp garam masala
  • salt to taste
  • 1/2 tsp cumin seeds
  • 1 star anise
  • 1/2 TBSP Ghee(clarified butter)
  • 1/2 cup yogurt
  • 2 med tomatoes sliced
  • harware
  • baking dish

Directions
  1. make 2 even slits in the chicken pieces
  2. marinade in a glass bowl chicken pieces, yogurt, ghee, cumin seeds,salt, tumeric, masala. Rub marinade into the slits as well
  3. let sit for about an hour or uptill however long you need in the refrigerator
  4. heat the oven to 350F
  5. place the sliced tomatoes on the bottom of baking dish
  6. arrange chicken pieces on top of the tomatoe slices
  7. bake loosely covered with foil for about an hour. Check at 55 minutes.
  8. chicken should be be tender, if there is no gravy, you may add 2oz of water r however much liquid you desire and season to taste.
  9. garnish freshly chopped cilantro
  10. side note:
  11. clarified butter may be expensive to come by in stores, luckily you can make your own at home =D yay! check my recipe for that
