How to make it

  • bring water to boil, season with salt and oil. add pasta and cook 8-12 minutes till al dante.
  • drain pasta reserving 1/4 cup of boiling liquid if you can, wash pasta down under running water to stop cooking and rinse off excess salt.
  • in a pan, melt butter on med-high heat and add mushrooms, herbs, pepper flakes. mix till mushroom absorbs the butter.
  • pour in cream and add in cheese, salt and pepper, let the sauce thicken.
  • add prepared pasta and spinach, mix to coat pasta well
  • if you prefer more sauce add the reserved water from boiled pasta.
  • serve warm and garnish with a sprinkle of parmesan cheese if you like
  • enjoy
