Wednesday Night Pasta Recipe
I like italian food alot, and i like to take the time to cook properly, but this is a midweek favorite when i get off classes. Big hit with my mother again.......sometimes shortcuts are fantastic

Ingredients
  • 2 cups dried pasta( any kind, i prefer fuscilli or fettucine)
  • 1 cup frozen spinach
  • 1/2 cup chopped mushroom( i like more)
  • 1 TBSP butter
  • salt
  • pepper
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese
  • 2 tsp Italian herbs
  • pinch red pepper flakes

Directions
  1. bring water to boil, season with salt and oil. add pasta and cook 8-12 minutes till al dante.
  2. drain pasta reserving 1/4 cup of boiling liquid if you can, wash pasta down under running water to stop cooking and rinse off excess salt.
  3. in a pan, melt butter on med-high heat and add mushrooms, herbs, pepper flakes. mix till mushroom absorbs the butter.
  4. pour in cream and add in cheese, salt and pepper, let the sauce thicken.
  5. add prepared pasta and spinach, mix to coat pasta well
  6. if you prefer more sauce add the reserved water from boiled pasta.
  7. serve warm and garnish with a sprinkle of parmesan cheese if you like
  8. enjoy
