How to make it

  • In bowl, whisk together flour, sugar, baking powder, cinnamon and salt. Add rolled oats and raisins; stir to combine.
  • Whisk together egg, milk and 2 tbsp (25 mL) of the oil.
  • Pour egg mixture over top of dry ingredients; stir until almost smooth.
  • Heat skillet over medium heat; brush with some of the remaining oil.
  • Pour about 1/4 cup (50 mL) batter for each pancake into pan; cook until underside is golden brown and bubbles break on top but do not fill in, 1-1/2 to 2 minutes. Turn and cook until underside is golden brown, about 1 minute.
