Sunnies Veggie Rich Orzo

- 1 16 oz pack orzo shopping list
- 1 1/2 cup diced red peppers shopping list
- 1 1/2 cup diced fresh mushrooms shopping list
- 2 cloves minced garlic or 1 tablespoon prepared minced garlic shopping list
- 1 cup chopped green onions shopping list
- 1/4 cup chopped fresh cilantro shopping list
- 4 cups small broccoli flowerets shopping list
- 1 can garbanzo beans drained and rinsed shopping list
- 2 cans cream of mushroom soup shopping list
- 1/4 to 2/3 cup milk shopping list
- 4 tablespoons olive oil shopping list
- 1/4 cup shredded parmesan cheese shopping list
How to make it
- Brown only 1 cup orzo in 1 tablespoon olive oil over medium heat, this should take a minute or two stir often for even browning, then cook all (even the browned orzo) orzo according to directions on package.
- Heat rest of oil and sauté peppers, mushrooms, onions, celery, and garlic for a few minutes over medium heat season with salt and pepper. Turn off heat or turn down to low and add cilantro and broccoli and cover with lid.
- Drain orzo once done and put back in pan, add cream of mushroom soup, milk, parmesan cheese, garbanzo beans, and season with fresh cracked black pepper.
- Add vegetable mixture and serve or put in a lightly greased 9x13 cake pan and heat in 375 degree oven for 15-20 minutes. Would be good with about 2 -3 cups cooked diced chicken or turkey mixed in.
