Gluten Free Lemon Pudding Cake

- 3/4 cup granulated sugar shopping list
- 2 tbsp potato flour shopping list
- 1 1/4 tsp grated lemon rind shopping list
- 1/4 cup lemon juice shopping list
- 2 tbsp vegetable oil shopping list
- 2 eggs, separated shopping list
- 1 cup milk shopping list
How to make it
- Combine sugar, flour and salt. Stir in lemon rind, lemon juice and vegetable oil. In a separate bowl, lightly beat egg yolks, add milk. Add to lemon mixture and mix well. Beat egg whites untill stiff peaks form. Fold into lemon mixture. Pour into 1 quart baking dish. Place baking dish into a larger pan containing one inch hot water. bake 350 degrees for about 45 minutes or until cake is tender. (Two layers form, cake and pudding) Serve warm or cooled. Makes 4-6 servings.
