Ginger Crinkles Recipe
I love ginger cookies, and I've adjusted this recipe over the years so that they are soft and chewy on the inside, but slightly crisp on the outside, the way I like them.

Ingredients
  • 3/4 c. butter flavor shortening
  • 1/2 c. sugar
  • 1/2 c. dark brown sugar
  • 1 egg
  • 1/4 c. molasses
  • 2 c.flour
  • 1/2 tsp. salt
  • 2 tsp. soda
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1 tsp. ginger
  • 1 TBSP half & half
  • finely chopped candied ginger, about 1/2 cup, or to taste
  • Demerra or decorating sugar, or combination

Directions
  1. Cream shortening & sugar.
  2. Beat in egg & molasses.
  3. Add dry ingredients & cream.
  4. Stir in candied ginger.
  5. Mix to form soft dough.
  6. Roll into balls, roll balls in sugar, bake at 375 till tops are cracked and light brown.
  7. To soften futher, store in tightly covered container overnight with a slice of fresh bread.
