Ingredients
  • 800g small fish
  • pepper & salt
  • 1 medium onion
  • bay leaf
  • clove of garlic
  • mint, fresh if available
  • 2 tablespoons oil
  • lemon
  • 3.5 oz. rice
  • 6 tomatoes

Directions
  1. Mince the onion and the clove and fry in the oil till soft.
  2. Peel and cube the tomatoes.
  3. Add to the onions.
  4. Add the herbs and enough water to make the soup.
  5. Wait until the mixture boils and then add the fish.
  6. Cook slowly until the fish is cooked.
  7. Strain the whole mixture making sure to squeeze all the juice out of the fish and the herbs.
  8. Put the strained liquid back on the stove and add the rice.
  9. Cook until the rice is soft.
  10. Add a few drops of lemon and serve hot.

I am going to have to try this out, I love soups and have all of the fresh herbs and can not wait to test this recipe.

You can also use fish heads like lampuki (dolphin fish) instead of the small fish. Sounds very good, what herbs do you use exactly?
