Zucchini Raisin Muffins

- 1/1/2 cups of whole wheat flour shopping list
- 1/4 cup wheat germ shopping list
- 1/1/2 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1/2 tsp ground cinnamon shopping list
- 2 eggs beaten shopping list
- 3/4 cup Stonyfield Farm lowfat organic vanilla or lemon yogurt shopping list
- 1/2 cup light brown sugar shopping list
- 1 cup firmly packed grated zucchini shopping list
- 1/2 cup raisins shopping list
How to make it
- Preheat oven to 350 degrees. Grease 12-muffin cup pan or spray with cooking spray. In large bowl combine dry ingredients. In another bowl combine eggs, yogurt and sugar. Make a well in the center of the dry ingredients and pour in wet mixture. Mix until well blended. Stir in zucchini and raisins. Spoon batter in prepared muffin pans. Bake until tops are golden brown and toothpick center is clean. 20 to 25 minutes. Cool on wire rack. Enjoy.
