Ingredients
  • 1/1/2 cups of whole wheat flour
  • 1/4 cup wheat germ
  • 1/1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 2 eggs beaten
  • 3/4 cup Stonyfield Farm lowfat organic vanilla or lemon yogurt
  • 1/2 cup light brown sugar
  • 1 cup firmly packed grated zucchini
  • 1/2 cup raisins

Directions
  1. Preheat oven to 350 degrees. Grease 12-muffin cup pan or spray with cooking spray. In large bowl combine dry ingredients. In another bowl combine eggs, yogurt and sugar. Make a well in the center of the dry ingredients and pour in wet mixture. Mix until well blended. Stir in zucchini and raisins. Spoon batter in prepared muffin pans. Bake until tops are golden brown and toothpick center is clean. 20 to 25 minutes. Cool on wire rack. Enjoy.
