How to make it

  • Clean and trim asparagus
  • Toss with a tiny bit of olive oil, salt and pepper
  • Spread on the grill (we use a countertop contact style grill but an outdoor grill or even a saute pan would work!) and cook until bright and warm but still crisp
  • while asparagus is cooking slice onion into thin slices and break into rings
  • butter each slice of bread however heavily you like (I prefer just a touch of butter but my mom loves it slathered on thick!)
  • split the cooked asparagus between 2 slices of bread, top with onions and bread
  • enjoy!
