Peanut Satay Dipping Sauce Recipe
Will keep in the fridge in an airtight jar for a couple of weeks as it makes a lot. It goes really well with chicken, especially if you add more lime juice and coriander to serve.

Ingredients
  • 1 tablespoon groundnut / vegetable oil
  • 4-6 teaspoons crushed dried red chili flakes
  • 1 small finely chopped white onion
  • 2 tablespoons soy sauce
  • 2 kaffir lime leaves, vein removed, chopped finely
  • 1 can coconut milk
  • 1 jar peanut butter
  • 3 tablespoons palm or brown sugar
  • juice of 2 limes

Directions
  1. Heat the oil and carefully fry the chilli flakes on a low heat.
  2. Add the chopped white onion and soften without colouring.
  3. Add the sugar, soy and lime leaves and cook briefly until fragrant.
  4. Stir in the peanut butter until well mixed.
  5. Remove from the heat and add the lime juice and half the coconut milk.
  6. Thin to desired consistency with the remaining coconut milk. NB It will thicken upon cooling.
