Vegetable Stuffed Artichokes Recipe

Ingredients
  • 1 cup seasoned bread crumbs
  • 3 tablespoons finely chopped onion
  • 3 tablespoons minced green bell pepper
  • 2 small cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano crushed
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons water
  • 3 medium globe artichokes stemmed trimmed and washed

Directions
  1. In medium bowl combine crumbs, onion, pepper, garlic, oil, oregano, salt, pepper and water.
  2. Pull leaves of artichokes down and fill each leaf with 1 teaspoon stuffing.
  3. Place artichokes in saucepan then pour 1" water and bring to boil.
  4. Cover and simmer 50 minutes basting often and adding additional water if needed.
