Vegetable Stuffed Artichokes

- 1 cup seasoned bread crumbs shopping list
- 3 tablespoons finely chopped onion shopping list
- 3 tablespoons minced green bell pepper shopping list
- 2 small cloves garlic minced shopping list
- 2 tablespoons olive oil shopping list
- 1 teaspoon dried oregano crushed shopping list
- 1/4 teaspoon salt shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
- 2 tablespoons water shopping list
- 3 medium globe artichokes stemmed trimmed and washed shopping list
How to make it
- In medium bowl combine crumbs, onion, pepper, garlic, oil, oregano, salt, pepper and water.
- Pull leaves of artichokes down and fill each leaf with 1 teaspoon stuffing.
- Place artichokes in saucepan then pour 1" water and bring to boil.
- Cover and simmer 50 minutes basting often and adding additional water if needed.
