Linguini With Salmon And Mushrooms

- 1/4 cup olive oil shopping list
- 12 ounce skinless salmon fillet cut into 3/4" pieces shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 3 large garlic cloves chopped shopping list
- 1/2 pound fresh mushrooms sliced shopping list
- 5 green onions chopped shopping list
- 1 large tomato seeded and diced shopping list
- 1/3 cup dry white wine shopping list
- 3 tablespoons drained capers shopping list
- 1/2 pound dried linguine freshly cooked shopping list
- 1/4 cup chopped fresh dill shopping list
- 1 tablespoon fresh lemon juice shopping list
How to make it
- Heat oil in heavy large skillet over medium high heat.
- Season salmon with salt and pepper then add to skillet and sauté 3 minutes.
- Using slotted spoon transfer salmon to plate.
- Add garlic to same skillet and sauté 30 seconds then add mushrooms and sauté 2 minutes more.
- Add green onions, tomato, wine and capers then cook 5 minutes.
- Add linguine, dill, lemon juice and salmon then toss well and season to taste.
