Linguini With Salmon And Mushrooms Recipe
This is one of my favorite salmon and pasta dishes. It has a lot of great flavors all blended together, yet it is so easy to make. Always a big hit with my family when I make this. Enjoy

Ingredients
  • 1/4 cup olive oil
  • 12 ounce skinless salmon fillet cut into 3/4" pieces
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 3 large garlic cloves chopped
  • 1/2 pound fresh mushrooms sliced
  • 5 green onions chopped
  • 1 large tomato seeded and diced
  • 1/3 cup dry white wine
  • 3 tablespoons drained capers
  • 1/2 pound dried linguine freshly cooked
  • 1/4 cup chopped fresh dill
  • 1 tablespoon fresh lemon juice

Directions
  1. Heat oil in heavy large skillet over medium high heat.
  2. Season salmon with salt and pepper then add to skillet and sauté 3 minutes.
  3. Using slotted spoon transfer salmon to plate.
  4. Add garlic to same skillet and sauté 30 seconds then add mushrooms and sauté 2 minutes more.
  5. Add green onions, tomato, wine and capers then cook 5 minutes.
  6. Add linguine, dill, lemon juice and salmon then toss well and season to taste.
