Mexican Skillet Dinner

- 1 lbs hamburger shopping list
- salt and pepper to taste shopping list
- 1 11 oz can Mexi-corn shopping list
- 1 15.5 oz can chili-style kidney beans shopping list
- 1 1.25 oz package taco seasoning shopping list
- 3/4 c rice (not instant rice) shopping list
- 2 1/4 cups liquid and water shopping list
- 1 c cheddar cheese (optional) shopping list
How to make it
- Brown the hamburger in a 10 inch skillet, drain
- Open and drain the liquid from the corn and beans in to a measuring cup. Add enough water to equal 2 1/4 cups.
- Add liquid to hamburger
- Add taco seasoning to hamburger
- Add rice
- Heat mixture to boiling
- Cover and simmer for 20 minutes, stirring often
- Add corn and beans five minutes before time is up
- Rinse out the cans and add liquid, if more liquid is needed
- If desired, cheese can be added on top after cooking. Let stand covered until cheese melts
