Mexican Skillet Dinner Recipe
This is an easy, Mexican-style dinner that can be use as is or put in taco shells or wrap as an enchilada. This is a very versatile dish.

Ingredients
  • 1 lbs hamburger
  • Salt and pepper to taste
  • 1 11 oz can Mexi-cprn
  • 1 15.5 oz can chili-style kidney beans
  • 1 1.25 oz package taco seasoning
  • 3/4 c rice (not instant rice)
  • 2 1/4 cups liquid and water
  • 1 c cheddar cheese (optional)

Directions
  1. Brown the hamburger in a 10 inch skillet, drain
  2. Open and drain the liquid from the corn and beans in to a measuring cup. Add enough water to equal 2 1/4 cups.
  3. Add liquid to hamburger
  4. Add taco seasoning to hamburger
  5. Add rice
  6. Heat mixture to boiling
  7. Cover and simmer for 20 minutes, stirring often
  8. Add corn and beans five minutes before time is up
  9. Rinse out the cans and add liquid, if more liquid is needed
  10. If desired, cheese can be added on top after cooking. Let stand covered until cheese melts
