Carbonnades A La Flamande Recipe
This is a beef stew that uses beer as it's braising liquid. It is great for cold weather comfort or jsut to satisfy that beef hunger. Try a nice soda bread to sop up the rich gravy.

Ingredients
  • 3 pounds boneless chuck, cut into 1" cubes
  • 1 can (10 1/2 oz.) condensed beef broth
  • 1 cup flour
  • 2 cups beer (ie. Budweiser, not light)
  • 6 large onions, peeled and quartered
  • 1/4 cup parsley
  • 1/3 cup oil
  • 1 large bay leaf
  • 1/2 tsp. crumbled tyme
  • 2 garlic cloves, finely chopped
  • 2 tsp. salt
  • 1 tsp. black pepper

Directions
  1. Mix flour, salt, and pepper together.
  2. Dredge the beef cubes in the flour mixture.
  3. Heat shortening in a large sauce pan.
  4. Add beef and brown on all sides.
  5. Add remaining ingredients.
  6. Cover tightly and simmer for 1 1/2 hours or until meat is tender, stirring ocassionally during cooking.
  7. Add water as necessary to keep the stew from sticking to pan.
  8. Add salt and pepper to taste.
  9. Garnish with the parsley, and serve it with boiled baby potatoes.
