Easy Irish Soda Bread Recipe
This bread is very easy to make, and can be frozen for a later use. I love it smeared with a cinnamon-honey compound butter.

Ingredients
  • 8 cups Bisquick
  • 1/4 cup sugar (Splenda can be substituted)
  • 2 cups raisins
  • 4 large eggs
  • 2 Tbl. caraway seeds
  • 1 1/3 cups milk

Directions
  1. Mix Bisquick, caraway seeds, raisins, and sugar in bowl.
  2. beat eggs and milk together and add all at once to the dry ingredients.
  3. Stir to form a sticky dough.
  4. Knead the dough on a lightly floured board to form a smooth ball.
  5. Cut dough in half and form two smooth balls.
  6. Place balls on a greased cookie sheet.
  7. With a sharp knife, cut a cross 1/2" deep into top center of each ball.
  8. Bake in a preheated 400 degree oven for 25 - 30 minutes or until richly browned and firm to touch.
  9. Cool thoroughly on a wire rack before cutting.
  10. Spread with butter and enjoy.
  11. If freezing, wrap the cooled bread in foil for future use and freeze. When ready to use, thaw for two hours.
