I got this recipe from a cookbook called "101 Things to do with a Slow Cooker"

Ingredients
  • 1 pound ground beef, browned and drained
  • 1 can (14 1/2 ounces) crushed tomatoes
  • 1 can (14 1/2 ounces) diced tomatoes with green chilies * with liquid
  • 1 can (15 ounces) whole kernel corn, drained
  • 1/2 cup dried minced onion
  • 1 box (6.8 ounces) spanish rice, with seasoning packet
  • 6 cups water
  • *For a spicer version use diced tomatoes with jalapenos.

Directions
  1. Combine all ingredients in greased 4 1/2 to 6 quart slow cooker. Cover and cook on low heat 4-5 hours. Do not over cook. Makes 4-6 servings.
  2. Top with grated cheese and sour cream, if desired. Serve with tortilla chips.
