Spaghetti with zucchini

- 1 pound thin spaghetti prepare (al dente) according to package shopping list
- 4 10" zucchini sliced into 1/4" rounds (not peeled) shopping list
- 8 garlic cloves finely minced shopping list
- 4 Tbl. butter shopping list
- 1/2 cup extra virgin olive oil, divided shopping list
- 1/2 cup grated parmesan cheese, plus more for sprinkling on top shopping list
How to make it
- Prepare the spaghetti according to package (do not overcook)
- While spaghetti is cooking, heat 3 Tbl. oil in a saute pan.
- Add the garlic and cook until golden.
- Add the zucchini and saute until it is dark golden, adding oil as needed (be careful to keep the garlic from burning).
- Add the remaining oil and butter and cook until butter is all melted.
- Toss the zucchini with the pasta and Parmesan cheese.
- Serve with a liberal sprinkling of cheese on top.
