Spaghetti With Zucchini Recipe

Ingredients

1 pound thin spaghetti prepare (al dente) according to package

4 10" zucchini sliced into 1/4" rounds (not peeled)

8 garlic cloves finely minced

4 Tbl. butter

1/2 cup extra virgin olive oil, divided

1/2 cup grated Parmesan cheese, plus more for sprinkling on top

Directions

Prepare the spaghetti according to package (do not overcook)

While spaghetti is cooking, heat 3 Tbl. oil in a saute pan.

Add the garlic and cook until golden.

Add the zucchini and saute until it is dark golden, adding oil as needed (be careful to keep the garlic from burning).

Add the remaining oil and butter and cook until butter is all melted.

Toss the zucchini with the pasta and Parmesan cheese.

Serve with a liberal sprinkling of cheese on top.

I Made this after typing in some ingredients I had on hand. It was delicious and simple! I added chopped tomatoes before serving (because I had some) and it was a nice addition.
