Easiest Ever Summer Berry Ice Cream Recipe

Make this with or without an ice cream freezer. Fresh and delightful!

Ingredients
  • 16 oz fresh strawberries or summer berries
  • 4 oz caster sugar
  • 10 oz double cream
  • Juice of 1 lemon

Directions
  1. Mash or puree berries in a mixing bowl.
  2. Stir in sugar, cream and lemon juice.
  3. Mix well.
  4. Pour into ice cream freezer and churn until softly frozen
  5. OR
  6. Place in freezer container and freeze, stirring every hour or so until softly frozen.
  7. Freeze unitl firm.
  8. Let soften in refrigerator for 30 minutes before serving.
  9. Serve garnished with berries.
