Ingredients
  • 6 large ripe tomatoes, skinned and chopped
  • 1 orange
  • 1 lemon
  • 4 tbl olive oil
  • chopped fresh basil to taste
  • sea salt & pepper to taste

Directions
  1. place tomatoes in collander
  2. grate over both the orange and lemon zest
  3. season generously
  4. leave to drain for half an hour
  5. blitz in a blender with olive oil
  6. scatter chopped basil over and you're done
