This is a quick, midweek dish. It is a meal in and of itself, although I sometimes like it with a sideorder of cooked rice.

Ingredients
  • 1 1/2 lb Cod fillet (or halibut)
  • 2 tb butter
  • 2 c frozen diced O'Brien potatoes
  • 1 pk frozen succotash
  • 1/2 ts garlic pepper blend
  • 1/2 ts seasoned salt
  • 1/2 ts thyme leaves
  • 1/8 ts cayenne

Directions
  1. Heat oven to 425°F . Spray 11x9-inch (2qt) baking dish with cooking spray. Cut halibut into 4 serving-size pieces. Place halibut in baking dish. Melt 1 tablespoon of the butter; brush over halibut.
  2. In a 10-inch nonstick skillet, melt remaining 1 tablespoon butter over medium-high heat. Cook potatoes in butter 5 minutes, stirring occasionally. Stir in succotash. Cook 3 to 5 minutes, or until vegetables are crisp-tender. Spoon mixture arround halibut in baking dish. Sprinkle halibut and vegetables with remaining ingredients; stir vegetables slightly.
  3. Bake uncovered 20 to 25 minutes or until halibut flakes easily with fork and vegetables are tender.

You say you live in God's country on the Eastern Shore of MD, but this sounds like it came straight from New England. Great simple recipe!


I actually live on the Western Shore of MD, and you are correct, it's a New England style recipe. It was originally written for halibut, but I more commonly use cod because I have it on hand. Sometimes I'll vary it, using hash browns instead of potatoes O'Brien. Same basic flavors. Hope you like it.
