Ingredients
  • 2 Onions,chopped
  • 3 Tablespoons Oil
  • 1 Zucchini,diced
  • 4 Cloves Garlic,minced
  • 1 Tablespoon Chili Powder
  • 2 teaspoon Ground Cumin
  • 2 Cans Yellow Hominy,drained
  • 1 Tablespoon Fresh lime Juice
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground peppercorns
  • 1 Cup each -Cheddar Cheese,Monterey Jack
  • 1/4 Cup Fresh Cilantro leaves,chopped

Directions
  1. Cook onions in oil until they are soft,stirring.
  2. Add zucchini,garlic,chili powder,cumin,cook about 5 minutes or until onions turn brown.
  3. Reduce heat ,add homine,lime juice,salt,and pepper,stir until blended.
  4. Continue to cook until hominy is heated through.
  5. Remove from heat ,stir in the cheeses and chopped cilantro,serve warm.
