This is the closest I've come to the croque monsieurs you get in French diners. It's rich, creamy and filling. My recipe has ham to keep with tradition, but I make it without the ham (vegetarian) and it's still wonderful!

Ingredients
  • 2 tbsp. unsalted butter
  • 2 1/2 tbsp. all-purpose flour
  • 1 cup whole milk
  • pinch of ground nutmeg
  • 1/2 bay leaf
  • 6 slices firm white sandwich bread (cut off crust)
  • 6 thin slices Black Forest ham
  • 1/2 lb. grated gruyere
  • Dijon mustard

Directions
  1. Melt the butter over low heat in a small saucepan and add the flour all at once.
  2. Stir with a wooden spoon for 2 minutes.
  3. Slowly whisk in milk.
  4. Add nutmeg and bay leaf.
  5. Increase heat to medium-high and boil, whisking constantly, about 2 minutes.
  6. Remove from heat, add salt and pepper, and whisk in 1/2 cup gruyere.
  7. Remove bay leaf and set aside.
  8. Lay bread slices on baking sheet and toast for 2 minutes.
  9. Turn bread over and toast for an additional 2 minutes.
  10. Remove baking sheet from oven and preheat broiler on high.
  11. On baking sheet, lightly brush all bread slices with dijon mustard.
  12. Top 3 slices of bread with one slice ham each and top with about 1/8 cup gruyere.
  13. Place other bread on top to make sandwich.
  14. Spoon cheese sauce on top of the sandwiches (don't be shy!).
  15. Sprinkle remaining gruyere on top of sauce.
  16. Place baking sheet in oven and broil until cheese on top bubbles and begins to brown slightly, about 2-4 minutes.
