Mashed Potato Bake

- 3 large baking potatoes, peeled and cut into cubes shopping list
- 1 package (10 ounces) frozen chopped spinach, thawed shopping list
- 1/2 cup heavy cream shopping list
- 3 tablespoons butter shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon pepper shopping list
- Topping shopping list
- 1/2 cup Italian-style bread crumbs shopping list
- 3 tablespoons grated parmesan cheese shopping list
- 3 tablespoons melted butter shopping list
- 1 teaspoon dried parsley shopping list
How to make it
- Preheat oven to 375°F. Lightly grease a medium casserole dish.
- Place potatoes in a medium pot. Add enough water to cover; bring to a boil. Cook until tender, about 20 minutes. Drain and transfer to a medium bowl. Mash potatoes in bowl.
- Gradually add spinach, cream, butter, salt and pepper to bowl; mix until just combined. Transfer potato mixture to prepared dish; smooth top.
- For topping, in a small bowl, combine bread crumbs, Parmesan and melted butter. Sprinkle topping evenly over potato mixture. Bake until topping is golden, about 15 minutes. Sprinkle parsley over top. Serve immediately.
- Tips: Mashing Success
- For best results, cook potatoes just until fork tender and drain thoroughly. To mash, use a hand masher, a potato ricer, a food mill, or an electric mixer. Be sure not to overbeat potatoes because they will become thick and pasty.
