How to make it

  • Preheat oven to 375°F. Lightly grease a medium casserole dish.
  • Place potatoes in a medium pot. Add enough water to cover; bring to a boil. Cook until tender, about 20 minutes. Drain and transfer to a medium bowl. Mash potatoes in bowl.
  • Gradually add spinach, cream, butter, salt and pepper to bowl; mix until just combined. Transfer potato mixture to prepared dish; smooth top.
  • For topping, in a small bowl, combine bread crumbs, Parmesan and melted butter. Sprinkle topping evenly over potato mixture. Bake until topping is golden, about 15 minutes. Sprinkle parsley over top. Serve immediately.
  • Tips: Mashing Success
  • For best results, cook potatoes just until fork tender and drain thoroughly. To mash, use a hand masher, a potato ricer, a food mill, or an electric mixer. Be sure not to overbeat potatoes because they will become thick and pasty.
