Almond Coconut Date Balls Recipe
These are nutty, sweet, easy and vegan. Great for snacks or desserts. They are even wonderful crumbled on top of oatmeal made with vanilla almond milk !

Ingredients
  • 1/4 c. raw shredded coconut
  • 2 c. sliced almonds or nuts of your choice (hint: walnuts are too oily)
  • 1 tsp. cinnamon
  • 2 tsp. tahini
  • 18 pitted dried dates

Directions
  1. Add nuts & cinnamon to food processor and run until finely chopped
  2. Add tahini & continue to blend mixture
  3. Add dried fruit until mixture comes together.
  4. Roll into 1" balls.
  5. Refrigerate and enjoy!

This is a great recipe, Texyjay. Its simple, is a THREE INGREDIENT WONDER and I really like those nut stuffed dates that are rolled in coconut. What a great idea to combine all the ingredients and make balls or rolls out of them! I gave you a "5" rating for ingenuity and because I can tell already that these are going to be really good!
