How to make it

  • Cook pasta in lots of boiling salted water until al-dente.
  • Strain, run through cold water.
  • Heat Olive oil and butter (if using) in a medium deep pan.
  • Fry chopped garlic untill lightly browned.
  • Add mushrooms and peas and cook on med-high flame till all the moisture has evaporated.
  • Add tomatoes and the pasta, season well and give a good mix to coat the pasta well.
  • Remove off the stove after the tomatoes are lightly cooked. (their skin sort of wilt)
  • Season well and add the mixed herbs and parmesan cheese at this stage.
  • Serve piping hot with toasted garlic bread (mix salted butter/spread with grated garlic, pepper, smear on baguette slices, grill until brown)
