Quick Penne With Garlicky Bread Recipe
This is my quick fix week-night dinner as well as savior while entertaining unexpected guests! Teamed with store-bought garlic bread (or homemade if you like) its a complete meal.

Ingredients
  • Penne Pasta - 75g per person (I use the whole meal variety; you could use any pasta u like - but I prefer the bite-sized ones for this)
  • Olive Oil - 2-3 tbsp
  • Butter - 1/2 tbsp (optional)
  • Button Mushrooms ( chopped to chunks if too large)
  • Tomatoes ( large chunks)
  • Peas
  • Garlic - 1 pod per person (chopped finely)
  • Dried mixed herbs - 1-2 tsp
  • Grated parmesan cheese
  • Salt n pepper to season

Directions
  1. Cook pasta in lots of boiling salted water until al-dente.
  2. Strain, run through cold water.
  3. Heat Olive oil and butter (if using) in a medium deep pan.
  4. Fry chopped garlic untill lightly browned.
  5. Add mushrooms and peas and cook on med-high flame till all the moisture has evaporated.
  6. Add tomatoes and the pasta, season well and give a good mix to coat the pasta well.
  7. Remove off the stove after the tomatoes are lightly cooked. (their skin sort of wilt)
  8. Season well and add the mixed herbs and parmesan cheese at this stage.
  9. Serve piping hot with toasted garlic bread (mix salted butter/spread with grated garlic, pepper, smear on baguette slices, grill until brown)
