Farfalle with Sausage and Ricotta

- 1 pound Farfalle (Bow Tie) pasta shopping list
- 1 quart marinara sauce shopping list
- 1 cup ricotta cheese, warmed and divided shopping list
- 1/2 pound italian sausage shopping list
- fresh basil leaves, for garnish shopping list
How to make it
- Heat the marinara sauce and keep warm.
- Fry sausage until thoroughly cooked. Set aside and let cool for about 5 minutes. Slice the sausage into 1/4 inch pieces.
- Boil farfalle and keep warm.
- Warm the ricotta by placing it in a bowl over simmering water or in the top half of a double boiler. You can also use the microwave.
- Reserving about 1/2 cup of sauce, mix the pasta and sausage with the remaining marinara sauce. Heat until piping hot.
- Add all but 2 or 3 tablespoons of the warm ricotta cheese and mix very gently.
- Put pasta into a serving bowl, Pour remaining sauce over the pasta and sprinkle remaining ricotta over the sauce.
- Top with fresh basil.
- Serve immediately.
