Farfalle With Sausage And Ricotta Recipe

Ingredients
  • 1 pound Farfalle (Bow Tie) pasta
  • 1 quart marinara sauce
  • 1 cup ricotta cheese, warmed and divided
  • 1/2 pound Italian sausage
  • Fresh basil leaves, for garnish

Directions
  1. Heat the marinara sauce and keep warm.
  2. Fry sausage until thoroughly cooked. Set aside and let cool for about 5 minutes. Slice the sausage into 1/4 inch pieces.
  3. Boil farfalle and keep warm.
  4. Warm the ricotta by placing it in a bowl over simmering water or in the top half of a double boiler. You can also use the microwave.
  5. Reserving about 1/2 cup of sauce, mix the pasta and sausage with the remaining marinara sauce. Heat until piping hot.
  6. Add all but 2 or 3 tablespoons of the warm ricotta cheese and mix very gently.
  7. Put pasta into a serving bowl, Pour remaining sauce over the pasta and sprinkle remaining ricotta over the sauce.
  8. Top with fresh basil.
  9. Serve immediately.
