How to make it

  • Heat the marinara sauce and keep warm.
  • Fry sausage until thoroughly cooked. Set aside and let cool for about 5 minutes. Slice the sausage into 1/4 inch pieces.
  • Boil farfalle and keep warm.
  • Warm the ricotta by placing it in a bowl over simmering water or in the top half of a double boiler. You can also use the microwave.
  • Reserving about 1/2 cup of sauce, mix the pasta and sausage with the remaining marinara sauce. Heat until piping hot.
  • Add all but 2 or 3 tablespoons of the warm ricotta cheese and mix very gently.
  • Put pasta into a serving bowl, Pour remaining sauce over the pasta and sprinkle remaining ricotta over the sauce.
  • Top with fresh basil.
  • Serve immediately.
