Ingredients
  • 1/2 cup port, heated
  • 1 cup apricots, chopped
  • 1/4 cup butter
  • 2 cups onions, chopped
  • 2 cups chopped Black Forest ham
  • 6 cups stale bread, cubed or torn
  • 3 tbsp fresh sage, chopped
  • 1/4 cup parsley, chopped
  • 3/4 cup chicken stock or more to moisten
  • 1 egg
  • Salt and freshly ground pepper

Directions
  1. Pour port over apricots.
  2. Soak for 30 minutes.
  3. Melt butter in a skillet on medium heat.
  4. Sauté onion for 3 minutes or until softened.
  5. In a bowl, combine cooked onion with ham, bread cubes, apricots, any remaining port, and herbs.
  6. Add enough chicken stock to moisten.
  7. Stir in egg.
  8. Season well with salt and pepper.
  9. Stuff into turkey.
  10. Alternatively, place in buttered baking dish, cover with buttered foil and bake for 45 minutes or until cooked.
  11. Makes about 7 cups
