Indian Burger

- 2 pounds all natural ground turkey, shaped into 6 burgers (for moister burgers, a mix of white & dark meat) shopping list
- 6 slices fresh pineapple, cored shopping list
- cucumber & Tomato chutney (recipe follows) shopping list
- mango Curry Sauce (recipe follows) shopping list
- Romaine, thinly sliced shopping list
- 2 Tbs. olive oil for brushing buns shopping list
- 6 Brioche or good quality hamburger buns shopping list
- Kosher or sea salt shopping list
- Freshly ground pepper shopping list
- 1/2 english cucumber, quartered lengthwise, seeded & thinly sliced shopping list
- 1/2 pint grape tomatoes, halved shopping list
- 1/2 small red onion, halved & thinly sliced shopping list
- 1 Tbs. fresh mint, finely chopped shopping list
- 1 jalapeno, seeded & finely chopped shopping list
- 1/2 cup fresh lime juice shopping list
- 1 Tbs. sugar shopping list
- 1/4 cup water shopping list
- 1/2 cup Mango Chutney- medium hot shopping list
- 1/2 cup Greek yogurt shopping list
- 1/2 cup mayonnaise shopping list
- 2 tsp. curry powder shopping list
- 1 Tbs. fresh cilantro leaves, finely chopped shopping list
- 1 tsp fresh ginger, finely minced shopping list
- 1 tsp fresh lemon juice shopping list
How to make it
- To prepare chutney: In a small bowl, combine lime juice, sugar & water, stir well to combine. In another bowl, add cucumber, grape tomatoes, onion, mint, jalapeno & add lime juice mixture. Mix together & season with salt & pepper. Refrigerate 1 day.
- To prepare Mango Curry Sauce: Puree Mango Chutney in mini food processor. Put in mixing bowl, add yogurt, mayonnaise, curry, cilantro, ginger, lemon juice & combine. Season with salt & pepper & refrigerate.
- To prepare burgers: Prepare the grill to medium-hot heat & lightly oil grill. Spray vegetable or olive oil on pineapple & grill until lightly brown. Grill turkey burger to medium doneness (about 4 minutes per side) & season with salt & pepper.
- Brush inside of buns with olive oil & grill cut side down on cooler side of grill until golden brown. Put romaine on bottom of bun cover with turkey burger and top with pineapple, Cucumber-Tomato Chutney & Mango Curry Sauce.
