Dandhas Brazilian Coconut Milk Shrimp Stew Recipe
Another one of Dandha's dishes that have my guests scraping the bottom of the bowl when I cook it. This is a Brazilian dish that goes perfect with black beans and rice. Its full of great ingredients and easy to make. Enjoy!

Ingredients
  • 1 Onion
  • 4 cloves of garlic
  • 1 red bell pepper
  • 1orange pepper
  • 1 large tomato or two small
  • ¾ cup cilantro
  • ¾ parsley
  • 1 tbs palm oil
  • 1 can coconut milk
  • ½ tbs of mixed seasonings (salt, peppers, cumin, etc.)
  • “Old Bay” seasonings works well.
  • 1 pound small shrimp (tail removed)

Directions
  1. Chop all veggies.
  2. Saute Onion, garlic, bell peppers and tomatoes together in large pot.
  3. Add palm oil then coconut milk.
  4. Mix in seasonings though season to taste.
  5. Add shrimps and herbs last.
  6. Cover and cook for about 5 mins then enjoy!

Sounds like a great recipe. I can't eat shrimp but my son does.

Hey, I hope all is well. In regards to the coconut stew I normally dont saute tomatoes but when I do this dish I just throw it together. It comes out good either way. Enjoy!
