By using the basic tomato sauce and substituting the fresh basil with fresh finely chopped Italian parsley and adding mussels, shrimps or lobster, you can have three additional pasta sauces.

  • Prepared sauce from Sugo Alla Carrettiera recipe
  • 1 1/2 cups gamberi (shrimps) or cozze (mussels) or aragosta (lobster)
  • 2 tbsp Italian parsley
  • 1/4 cup dry white wine
  • Pasta choice: Spaghetti

Directions
  1. The preparation is the same with the addition of 1/4 cup dry white wine to step 2 with the parsley.
  2. The mussels, shrimps or lobster pieces are added to the tomato sauce at the very end of the simmering period.
  3. Again, red pepper flakes are used in this sauce with amount varying to one's taste of spiciness.
  4. Top with freshly grated formaggio parmigiano-reggiano.
  5. Bon Appetit!
