Lighter Banana Muffins

- 2 eggs, beaten shopping list
- 3 very ripe bananas, mashed shopping list
- 2 cups all purpose flour shopping list
- 1 teaspoon salt shopping list
- 3/4 cup white sugar shopping list
- 1 teaspoon baking soda shopping list
- 1/2 cup chopped walnuts (optional) shopping list
How to make it
- Pre-heat oven to 350 degrees F.
- Lightly grease or line 12 muffin cups
- In a medium bowl, combine eggs and bananas. In a separate bowl, mix together flour, salt, sugar and baking soda. Stir banana mixture into flour mixture. Fold in walnuts if desired. Pour batter into prepared muffin cups.
- Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean
