Ingredients
  • 1 LB ground chuck or Turkey breast depending on diet
  • 1 TBS olive oil
  • 3 TBS chopped shallot
  • 1 tsp salt
  • 3/4 tsp ground cumin
  • 3/4 tsp of ground corriander
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne
  • 4 skewers soaked in water for 1 hr

Directions
  1. Mix all ingredients together and allow to stand for at least 4 hrs before putting them on the grill. Take out of fridge and form into 2 inch flat shapes and stick 2 on a skewer. Grill until desired doneness.
  2. For reduced fat turkey version omit olive oil, add 1/4 cup of chicken stock and 2 TBS off egg beaters to replace fat. And for heart healthy version omit salt and use 1 tsp aleppo pepper ground.
  3. For dipping sauce use:
  4. low carb: 1/4 cup of mayo,1 TBS chopped mint,2 serranos mixed together.
  5. Reduced fat: use lowfat yogurt instead of mayo.
