Homestyle Embutido - Our Local Meatloaf Recipe
This is our local version of meatloaf using the simplest ingredients. I prefer wrapping it in foil for easy handling rather than the traditional method of using hog casings. May be kept in freezer for 2 weeks, thaw and warm before serving.

Ingredients
  • 2 1/2 lbs lean ground pork
  • 1 large white onion, minced
  • 1 cup red capsicum, minced
  • 1 pc egg
  • 4 pcs hard-boiled eggs, cut into 4 strips each
  • ½ cup raisins
  • 1 cup tomato sauce
  • 2 tbs soy sauce
  • 1 cup bread crumbs
  • ½ cup pickle relish
  • 1 tsp iodised salt
  • 1 tsp ground black pepper
  • Tomato catsup (optional)
  • Foil

Directions
  1. Combine all ingredients except hard-boiled eggs in a large mixing bowl.
  2. Lay out about 3-4 cups of mixture onto foil.
  3. Arrange to form a large sausage-shaped mixture.
  4. Flatten and lay out strips of hard-boiled eggs.
  5. Form into a big roll then cover entirely with foil and seal.
  6. Place in a large steamer, one on top of another.
  7. Steam rolls for at least 1hour.
  8. Check steamer, add water if necessary.
  9. Cool before putting inside chiller.
  10. Slice into ½ inch thick, served cold or heated in pan with a little oil.
  11. Use tomato catsup as dip or use drippings added with a little cornstarch for gravy.
