One of the women at my place of work gave me this recipe. I've not seen any others quite like it posted here, so I'll put it up. It's easy to do and has a nice smooth flavor. I like simple.

Ingredients
  • 1 prepared pie shell
  • 4 oz Swiss cheese (shredded or chopped)
  • 12 slices peppered bacon, fried crisp and chopped
  • 1/8 cup onion, sliced very thinly then chopped
  • 4 large eggs
  • 2 cup whipping cream
  • 1/4 tsp salt
  • 1/4 tsp paprika
  • 1/2 tsp sugar

Directions
  1. Pre-heat oven to 425 F.
  2. Spray the bottom of an aluminum foil, fluted, deep, disposable, pie plate, with baking spray.
  3. Layer in the pie crust and remove excess from the top by going round with your fingers and pressing the crust in, while trimming the top.
  4. Place pie crust in oven and bake for 10 min to brown.
  5. Meanwhile, mix the eggs, whipping cream, salt, paprika, and salt in a medium sized bowl. (I use 1 cup of prepared eggs instead of 4 large eggs.)
  6. Fry the bacon in a skillet over medium heat, then brown and crisp at a higher temperature before removing to drain and chop.
  7. Chop the bacon and the cheese and place on a paper plate for use later.
  8. Remove the pie crust from the oven and reset the temperature to 325 F.
  9. Sprinkle the bacon bits, the onion, and the cheese over the botton of the pie crust. Pour in the egg and cream mixture.
  10. Place in oven and bake at 325F for 50 minutes, or until a fork stuck into the center of the quiche is removed cleanly.
  11. Notes: There are several shortcuts you can take to make this a quicker process. Substitute microwavable bacon for the peppered bacon. Substitute the prepared eggs bought in a carton for the fresh eggs. Your choice.

Alterations

I recently swapped the bacon for 1/2 lb spicy sausage. It was a pleasant alteration.
