Black Bean Gazpacho Recipe
you can eat this as a snack, or as a main dish. it's the perfect soup on a hot summer day.

Ingredients
  • 2 14 oz cans of diced tomatoes
  • 2 cans of black beans - drained and washed
  • 2 cucumbers - peeled
  • 1 green pepper - chopped
  • back of green onions - diced
  • 3 tbs of olive oil
  • 3 tbs of red wine vinegar
  • 2 tsp salt
  • 1 tsp pepper
  • minced garlic
  • basil leaves
  • 2 cups of veggie broth

Directions
  1. cook vegetable broth and chill
  2. wash and drain the black beans with a strainer, you can drain the tomatoes if you'd like but it isn't necessary
  3. chop up all in ingredients
  4. mix it with in with the veggie broth, chill and enjoy!
